Front of the House Restaurant Cleaning Checklist
- Damp wipe entrance glass doors, frames and handles.
- Clean all ashtrays individually, spot clean mirrors and replace note pads and pencils by public phones inside Restaurants and within 15′ radios of exterior of Restaurant entrances and sanitize public phones. Organize area.
- Clean ash urns and imprint logo of entrance doors to Restaurants.
- Dust or damp wipe décor, art work, picture frames, decorative wall hangings, light fixtures, baseboards and wall decorative ledges. Clean chairs, tables, all furniture making sure to vacuum furniture upholstery removing any debris from crevices and clean furniture bases/legs. Use lather cleaner for leather material furniture.
- Dust window blinds, windowsills and shutters. Clean baseboards and kick plates, railing and decorative wood work.
- Dust and then wet mop exposed hard surface floors, taking care to get into corners, along edges and underneath tables. Remove gum or any sticky items.
- Vacuum exposed carpeting, taking care to get into corners, along edges and underneath tables. Vacuum floor rugs and walk-off mats. Remove gum or any sticky items. Remove any fresh soluble stains no bigger than 3 inches in diameter.
- High dust all shelves, all decorative wall hangings. Clean ceiling air vents and ceiling tiles next to vents as needed.
Bars Cleaning Checklist
- Remove bar mats, scrub and degrease and replace.
- Empty Trash cans.
- Sweep and mop bar floor and mop with mild degreaser including under equipment.
- Clean all floor drains and disinfect for any odors.
- Wipe all counters, shelving, and surfaces
Floor Care
- Spot clean carpet daily.
- Hard floor care done on request as extra work
Patio Cleaning Checklist
- Sweep and wash floor daily , remove spots
- Wipe clean all tables, chairs and fire places
- Position all tables, chairs, and cushions per provided floor plans/photos.
- Extract chairs and cushions for spotting as needed.
- Clean side station including counters , surfaces and floor
Kitchen Cleaning Checklist
- Clean ovens, grills, ranges, stoves and steam tables with degreaser and wipe dry.
- Wash surfaces of S/S tables with recommended cleaning detergent and wipe dry.
- Clean shelving with recommended cleaning detergent and wipe dry.
- Sweep and mop clean kitchen and passageway flooring surfaces of grease residue. Food waste droplets will be cleared and disposed.
- Clean all broilers, griddles, rotary ovens, skillets, flat tops and fryers.
- Break down and clean all burners, ovens and salamanders.
- Clean vent hoods of all grease residue and wipe dry inside and out.
- Empty all grease traps and pans.
- Remove and clean floor mats with an approved degreaser. Replace when dry.
- Disinfect all floor drains.
- Clean all “Butcher Block” surfaces.
- Polish all exposed copper plumbing
- Sweep and mop back hallway leading to elevator.
- Strip and wax hallway leading to elevator 3x per year.
Weekly Cleaning Kitchen Checklist
- Wash clean wall tiles with mild degreaser and wipe dry.
- Remove and clean exhaust hoods filters.
- Clean all gas pipes and water hoses of stains and wipe dry.
- Spot clean ceilings as needed.
Cafeteria Cleaning Checklist
- Clean ovens, grills, ranges, stoves and all cooking equipment including steam tables with degreaser
and wipe dry. - Clean shelving and surfaces of tables and counters with recommended cleaning detergent and
